Mother’s Day is a time to reflect on how precious and important moms are to us. They raise us, love us, care for us, give us their everything, and they keep us strong and healthy.
Mother’s Day is the perfect time when we get to celebrate our mothers and when we get to spoil and pamper them. With the colder months approaching, let mom stay in her cozy bed a little longer and start off Mother’s Day with a delicious and beautiful breakfast in bed.
We have created three simple papaya-inspired breakfast in bed ideas to kick-start your mom’s day with something bright, delicious and healthy. They say that you eat with your eyes first, and this is what you can create with our colourful and vibrant papayas!
- Papaya Chia Pudding
Dressing up a chia pudding with flowers and colourful fresh fruit will melt mom’s heart. The papaya smoothie has a delicious tropical taste and is super healthy, packed with vitamins, minerals and anti-oxidants! The combination with the chia pudding creates a power-packed breakfast in a glass. And on top of that, it is incredibly easy to prepare.
For the chia pudding, simply mix together 2 tbsp chia seeds with 1/2 cup milk and 1 tsp honey. Let is stand overnight in the fridge.
To make the papaya smoothie, simply blend together a fresh and ripe Neofresh papaya with a squeeze of lemon or lime.
Once the chia pudding has set, pour the smoothie over the chia pudding, and decorate it with flowers and a few other fruits such as berries.
- Syrup waffles topped with papaya compote and fresh papaya.
For the moms who love something sweet.
Use your favourite waffle recipe as the base of this dish, or you can buy a few ready-made syrupy waffles.
The papaya compote is sweet, sticky and delicious. By using a melon baller, you can easily create vibrant little fresh papaya balls to compliment the sweet of the compote.
To make the compote:
Pour 60ml orange juice, 2 tsp honey, 1-2 cinnamon sticks & 1/2 tsp vanilla essence into a pan. Bring to a rapid simmer and cook for 15 min or until it becomes thick and syrupy – stir every few minutes. Remove cinnamon sticks and add 60ml mashed papaya. Simmer gently for about 5 – 10 min until the papaya has softened and broken down.
Stack a few waffles on top of each other and top with the sticky compote and fresh papaya. Add some crunchy chocolates on top for some extra love!
- Papaya Boat
A Papaya Boat is always a winner. It is a blank canvas and can be combined with Mom’s favourite fruits, muesli, nuts or yoghurt. Papaya boats are fresh and a light and healthy way to kick-start a day full of pampering.
Play with textures and colours. Use yoghurt or even chia pudding as a base, and top it all off with some crunchy granola or nuts, and a few other fruits. Don’t forget to drizzle a bit of honey over the papaya boat to give it that special touch.
PS.. don’t forget the card and lots of hugs!
