PAPAYA BEEF BURGER

Papaya Burger

Beef Burgers with Blue Cheese & Papaya Cucumber Salsa & Papaya Compote:

Beef burger
(serves 1 burger)

  • 140 g lean beef mince

Marinade for burger:

  • 1 tbs oyster sauce
  • 1 tsp sweet chilli sauce
  • 1/2 tsp soy sauce
    juice of 1/4 lime
    pinch chilli flakes 1/2 tsp dried oregano
  • 2 tbs panko breadcrumbs

1. Add all the spices and sauces to the mince, combine all together and shape mince into patty

Papaya Compote

  • 1/2 juice of an orange
  • 63ml fresh orange juice
  • 2 tsp honey
  • 1-2 cinnamon sticks
  • 60ml scraped papaya (with a teaspoon, scrape the flesh of the papaya from the skin)
  • 1/2 tsp vanilla essence/vanilla pod – split lengthways

1. Pour orange juices, honey , vanilla essence/seeds & cinnamon sticks into a pan. Bring to a rapid simmer and cook for 15 min or until it becomes syrupy – stir every few minutes
2. Remove cinnamon sticks & add scraped papaya. Simmer gently for about 5 – 10 min, until the papaya has softened and broken down.
3. Set aside
4.Once ready to use, if it is too thick, heat gently and add 1-2 tbs orange juice

Papaya Salsa

  • 20g papaya – cut into square blocks
  • 15g cucumber – cut into square blocks, same size as papaya
  • 1 small radish – cut into tiny blocks (1/4 size of the papaya & cucumber)
  • 1/4 chopped fresh red chilli
  • 1/2 handful of fresh chopped coriander

1. Mix altogether, add 2 tbs of the salsa dressing and let it marinade for at lest 5 min. for flavours to infuse

Salsa Dressing

  • 30 ml soy sauce
  • 7.5 ml lime juice
  • 5ml lemon juice
  • 7.5 ml rice wine vinegar
  • 1/2 tsp sugar/ palm sugar/ honey
  • 1/2 tsp ginger juice (peel, then finely grate ginger and squeeze out the juice)
  • 1/2 tsp sesame oil

1. Place all ingredients in a jar and shake well

Ingredients for Burger

  • Beef burger Patty
  • Seeded burger bun
  • 1/4 sliced avocado
  • 2 thick slices tomato
  • 2 slices cos lettuce
  • 5 slices blue cheese
  • Papaya compote
  • Papaya salsa

Assembly

1. Barbecue/ grill the burger for about 3 min each side, top with the blue cheese for another 2 min, until the cheese melts. Lightly toast the burger bun at the same time
2. Place bun on plate, lettuce on bun, sliced tomato, sliced avocado, burger topped with melted cheese
3. Pour 2 tbs papaya compote on top of the patty, top with papaya salsa and coriander leaf
4. Scatter extra papaya salsa around the burger on the plate
5. Enjoy!!!!
