PAPAYA HUMMUS

Something totally different, salty and spicy papaya. The papaya hummus on a slice of toast is used as a base, by simply adding your favourite topping you can make a quick and easy breakfast.
Ingredients for Papaya hummus:
- 1 ½ cups of papaya pieces
- 400 g tin chickpeas (drained)
- ½ lemon (use juice and zest)
- ½ small Chilli
- Salt and pepper
- 2 teaspoons olive oil
- Ciabatta bread, sliced and toasted
Method:
Blend the papaya, chickpeas, lemon juice, lemon zest, chilly, salt and pepper to form a smooth spread.
Cool in serving dish
Drizzle olive oil
To serve:
Smear a thick layer of the hummus on a slice of toasted ciabatta
Add your favourite toppings
