Papaya and Prawn Burgers

1 Small Papaya Sliced into Wheel Shapes
1 Onion Sliced
1 Cup Prawns uncooked
1 Bunch Rocket and Watercress mixed leaves
1 Lime Juice only
1 Tbsp Honey
1 tsp Mustard
2 Tbsp white Grape Vinegar
Salt and pepper to taste
Peppadews for garnish
2 Tbsp Olive oil, plus more for rubbing over Papaya wheels and to fry onions.
Slice and peel papaya wheels and rub with some olive oil, heat a griddled pan and grill Papaya slices until you can see the griddled pattern.
In another pan add a drop of olive oil and fry onions till golden
Mix the lime juice with the mustard, vinegar, olive oil and honey and whisk together. Add the uncooked prawn and mix through before grilling on the griddled pan.
Start assembling your burger starting with the grilled Papaya, then the Avo slices and the onions.
Add the cooked Prawn and lastly the Rocket and peppadews
Drizzle with some of the leftover Marinade from the prawns.
