Papaya Cheesecake


2 cups of ginger biscuits

3 tablespoons of butter melted

625gr ripe papaya

2 x 225gram cream cheese

2/3 cup sour cream

3/4 cup sugar

2 eggs

1 teaspoon vanilla extract

2 tablespoons flour

2 granadillas

Icing sugar for dusting


Blend butter and biscuits and press mixture into a 20 cm springform pan.

Blend 3/4 of the papaya, cream cheese, sour cream, sugar, vanilla and eggs until smooth

Add the flour while blending till smooth

Pour mixture into springform and bake in a 180degrees celsius oven for 1 hour and 10 minutes

Remove from the oven and cool down completely.

Dress with slices of papaya, granadilla pips and a beautiful rose.
